Skinny Fudgy Chocolate Banana Muffins

yield: 12 MUFFINS

Ingredients:

  • 3 large, very ripe bananas
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1/3 cup unsweetened applesauce
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • hand full cup dark chocolate chips, plus more for topping

Directions:

Preheat the oven to 375F degrees.In a large bowl mash the bananas with a fork removing all the lumps. Stir in the sugar, egg, vanilla and applesauce.

Add the flour, cocoa powder, salt, baking soda and baking powder into the wet ingredients. Mix with a spatula to combine. Fold in chocolate chips. The batter will be think, don’t worry it is supposed to be!

Line a muffin tin with baking cups and then divide the batter into 12 cups. Each one will be filled to the top. Bake for 18-20 minutes or until a toothpick inserted into the middle comes out clean. Allow the muffins to cool for 2 minutes before pulling muffins out of the tins.
