We started this weekend off with seeing the Josh Abbot band down town. It ended up being a small crowd and was so fun! Jeff is from Texas and has a huge soft spot in his heart for anything Texas and red dirt country is no exception. Our third anniversary is coming up in a couple of weeks so this was part of his gift- the rest is still to come!!
Honestly Saturday was spend in bed! We had a quiet morning and then cleaned our apartment- boring I know but very necessary after a crazy week of work! Sunday we headed to the Mountain West Brew Fest ad had such a good time! I LOVE wine festivals and Jeff would fake sick before coming with me so this was a perfect compromise! I was able to sample all of the wine I wanted and he could have the beer. We both stepped out of our comfort zones- I discovered that I am a fan of unfiltered wheat bear and Jeff enjoys a glass of dry red (which is my dad’s wine of choice haha).
Monday has felt like Sunday all day! So appropriately I spent most of the day in the kitchen. Brunch is always my favorite meal so it was defiantly the center piece of our Labor Day. I mixed up a couple of strawberry smoothie bowls- a similar recipe can be found here and a batch of cinnamon pecan waffles. Below is the recipe I used this morning! The rest of the night will be spent cuddling on the couch with popcorn and a red-box. What did you all do this weekend?
- 2cups flour
- 4teaspoons baking powder
- 1⁄2teaspoon salt
- 1⁄4 cup sugar
- 1 teaspoon vanilla
- 1 teaspoon cinnamon
- handful of pecans
- 2eggs, separated
- 1⁄2cup oil
- Sift the dry ingredients together in a large bowl.
- Separate the eggs.
- In small bowl, beat egg whites until stiff.
- Mix together the egg yolks, milk and oil and stir slightly.
- Add to dry ingredients and mix well.
- Fold in beaten egg whites.
- 2cups milk
